Simple Pumpkin Recipe for the Whole Family

 

Autumn is pumpkin time! And for those who have already tried the classic pumpkin recipes from pumpkin soup to pumpkin puree to pumpkin gnocchi, we have a particularly simple and hearty recipe ready. Juicy chicken pieces combined with tender pumpkin and aromatic spices make this dish a real highlight for the whole family.Ideal for a quick dinner or as part of a cozy autumn menu - let yourself be inspired and enjoy the delicious flavors of autumn in your kitchen!

 

 

Ingredients for the Pumpkin-Chicken Pan

 

For 2 servings of this autumn recipe, you will need the following ingredients:

2 chicken breast fillets

1 red bell pepper

400 g Hokkaido *

1 onion

2 cloves of garlic

1 pinch of cinnamon

1 tbsp tomato paste or pesto

100 ml white wine

200 ml poultry stock

1 cup of cream

Spices (salt, black pepper)

Optional: 2 tbsp starch 

* Tip: Except for the stem, the Hokkaido pumpkin is completely edible!

 

 

How to prepare the quick dish with pumpkin

 

  1. Cut the chicken breast fillets into bite-sized pieces and put them in a bowl.Add the starch and mix together using a dining or cooking spoon until the pieces of meat are completely covered with starch.

 

  1. Remove the seeds from the red pepper and cut into small cubes. Cut the pumpkin into bite-sized wedges.

 

  1. Heat some oil in a pan and sear the chicken pieces on all sides. Then remove and set aside for now. Sauté the pumpkin and the pepper in the same pan and season with a small pinch of cinnamon.

 

  1. Chop the onion and garlic in a blender or cut finely. Then add the mixture and the tomato paste or pesto and roast everything well.

 

  1. Then deglaze with the white wine and let it reduce almost completely. Add the poultry stock and reduce the heat. Finally, stir in the cream and let everything simmer for about 5 minutes.

 

  1. In a final step, add the chicken back in and season everything with salt, pepper (and possibly a little sugar). Let it sit for about 5 minutes with the stove turned off and then serve.

 

Tip: We recommend serving it with rice, quinoa or roasted sweet potatoes as a side dish!
